and gearing up for next month.
This month has been very full and very busy!
Adjusting to TWO new babies in the house, while school starting back. Both my work and my classes has been daunting. So far, so good, but it takes a lot to make sure things are kept on schedule.
Of course, getting a full week off because of snow and freezing temps in nice, but can not rely on having that kind of time anymore.
With one week left of this month, I will finish up the menu and use up what I can from the freezer. January is usually a tight month and this one is no different. LOL
February is going to be here soon and I hope to keep on schedule with classes and menus. :-)

Dinner Last NIght
Honey Garlic Chicken in the slow cooker.
I did not have chicken thighs, so I used breasts, but other than that I followed the recipe. I always try and follow a new recipe exactly the first time and then make adjustments after the first try.
I thought I had boneless skinless thighs, but found out I was mistaken. LOL It was a winner! I served it with rice and couscous so people could have a choice although most chose both. :-)
I love when I find another slow cooker recipe to add to my list of options. With my classes starting back up this week, my slow cookers will be getting used A LOT!

Dinner Tonight
I like to make pizza. My problem is that I can never find a crust recipe that we like, until now...
I was watching "The Pioneer Woman" on the food channel this morning and she made pizza. The recipe for her crust was super easy compared to ones I have done in the past so I decided to try it!
It is a keeper. I did not make ours just like hers, but I did use her crust recipe and baked at the temp she did. I highly recommend it!
